What goes into it
The interesting bit isn’t the list. It’s why each thing earned its place.
We don’t start with “how cheap can we make this?” We start with a flavour worth obsessing over, then chase the ingredients and technique that make it work.
Some recipes borrow from heritage. Some came from long shifts and worse ideas. None came from a flavour-powder catalogue.
MADE THE HARD WAYBehind the bags
I didn’t even think I liked jerky. Then I got annoying about it.
Electrical engineer by trade. Jerky obsessive by poor life choices. The recipes came from long shifts, family food, heritage and an unreasonable number of test batches.
We still make it in small batches because the details are the entire point.
